Back-of-the-House Systems That Perfect Quality Food Services

Receiving Procedures

All food service products and supplies will be received and checked in at the kitchen dock and stored immediately. Any products of questionable quality and/or not meeting MMI Dining standards will be refused.

Sysco Shop – Ordering/Receiving System

The Sysco Shop system provides online ordering from our Prime Vendor. It also develops receiving logs, order guides, and purchasing reports.

Production Worksheets

MMI Dining utilizes this back-of-the-house tool for all dining locations to ensure correct production of food items, preventing overproduction and waste. Nothing gets produced in the kitchen without a production worksheet.

Cross-Function Training

MMI Dining’s cross-function training ensures a quality food service program. All of our employees are cross-trained to perform various functions and job duties throughout the food service program. Our cross-function training program also provides promotional opportunities for each of our people.

Menus and Standards

We implement Standardized Recipes into the operation— MMI Dining’s culinary recipe program. The use of recipes ensures our guests are receiving correct portions and, most importantly, consistent quality every time. We understand that each and every property will have individual likes and dislikes, and we will cater to the tastes of your visitors. For that reason, we will always allow for favorite recipes to be served. At the same time, tastes and preferences can vary by region, so constantly accept feedback to incorporate your ideas and wishes into the menu variety.

Prime Vendor Program

MMI Dining utilizes a Prime Vendor Purchasing Program to maximize our purchasing efforts to reduce costs while providing improved quality. Our procurement department negotiates pricing agreements directly with manufacturers to ensure the best price for our operations:

  • National foodservice distribution contract
  • National beverage contracts
  • National chemical program
  • National equipment purchasing program
  • Vendor equipment packages made available with no cost

Quality Assurance Performance Improvement

MMI Dining’s Quality Assurance Program is our in-house system of checks and balances. On an ongoing basis we will monitor:

  • Food temperatures throughout the receiving and production process
  • Temperatures of food products leaving the kitchen and upon receipt in the dining areas
  • Dish machine temperatures
  • Refrigeration temperatures
  • Delivery systems/times
  • Recipe compliance
  • Menu item appearance, quality and taste testing each meal period
